A long, slow ferment, then 22 months in French and American oak barriques. Racked without fining or filtration to keep its depth and power. Eighty-three cases bottled.
Tasting notes
Blackcurrant, cassis and dark chocolate, with cedar, tobacco leaf and a hint of spice. A velvet texture and a long finish.
Food match
Rack of lamb with potato gratin and sautéed seasonal greens.
Cellaring
Will keep developing over the next 10 to 20 years with careful cellaring.
